The Complete Guide to Choosing a Cutting Board

If there's a material, chances are they've made it into a cutting board, and the differences between them go a lot deeper than price and performance. Here's an honest breakdown of every major option, including the wood types that actually matter.

A cutting board is one of those purchases you make once and never think about again. But the material you're chopping on every day affects your knives, your food safety, and whether any material is actually ending up in your meals.

There's a wider range of options than the average kitchen aisle suggests. Plastic, bamboo, glass, marble, stone, composite, silicone, and a long list of individual hardwoods all show up under the same generic "cutting board" label, and they perform nothing alike. Here's how each one actually holds up, starting with the one most kitchens already have and probably shouldn't.

Plastic: the one worth phasing out

Standard cutting boards made from polyethylene (PE) or polypropylene (PP) have a real problem that has nothing to do with price or convenience.

A 2023 study published in Environmental Science and Technology found that these boards shed millions of microplastic particles into food annually under normal cutting conditions, with the amount increasing as knife marks accumulate. A separate analysis found that a single knife stroke can release 100 to 300 particles, with roughly half landing in the food and the rest washing down the drain. One peer-reviewed estimate put annual exposure between 7.4 and 71.9 million plastic particles per person from a polyethylene board alone.

The toxicology behind what that exposure does long term is still being worked out, and it's fair to say researchers haven't nailed down a confirmed disease mechanism yet. What's well established is the exposure pathway itself, and the fact that a board with visible knife scoring sheds noticeably more than a new one. New plastic boards are the lesser problem. Old, scarred ones are actively making it worse with every cut.

The bacteria question

Before getting into the better materials, it's worth addressing the assumption that pushed people toward plastic in the first place. For decades plastic was considered the safer option because it could go in the dishwasher and looked easier to sanitize than a porous wood surface.

That assumption didn't survive contact with the research. A landmark 1994 study at the University of Wisconsin-Madison, led by food safety researcher Dean Cliver, contaminated both wood and plastic boards with E. coli, Salmonella, and Listeria. Within three minutes, 99.9 percent of the bacteria on wooden boards had died off. The same bacteria on plastic were still alive, and when boards were left at room temperature overnight, bacteria on plastic had multiplied while wood showed no recoverable bacteria at all.

The mechanism comes down to wood's porous structure. When a wooden board gets wet during washing, it pulls water, and any bacteria sitting in it, down into the wood through capillary action. Trapped below the surface and cut off from moisture and nutrients, the bacteria die. Plastic looks smooth and non-porous, but develops microscopic knife scarring with use that's extremely difficult to fully clean, even in a dishwasher.

Follow-up research has backed this up consistently. A study comparing oak, beech, and plastic found bacteria survived longest on plastic, with oak showing the fastest die-off. A case-control study Cliver cited found home cooks using wooden boards were less than half as likely to contract salmonellosis compared to those using plastic.

One caveat worth knowing: this effect comes from the wood itself, not a coating sitting on top of it. A sealed or oiled board still has this subsurface antibacterial activity underneath the finish.

Wood: the category

This is where most cutting board advice gets lazy, treating "wood" as a single option rather than a category with real differences between species. The right wood depends on what you're prioritizing: knife care, durability, low maintenance, or looks.

A few shared rules apply across all of them. The sweet spot for cutting board hardness sits between roughly 900 and 1,500 on the Janka hardness scale, which measures resistance to denting. Too soft and the board scars constantly. Too hard and it dulls your knives faster than it should. Closed-grain woods with tight pores, like maple, walnut, and cherry, resist moisture and bacteria better than open-grain woods like oak, which is part of why oak shows up on butcher block furniture but rarely on a quality cutting board.

Construction matters as much as species. End grain boards are built so the wood fibers face upward, which lets a knife separate the fibers rather than slice across them. That makes the surface partially self-healing and noticeably gentler on knife edges, though it costs more and requires more careful gluing during manufacturing. Edge grain boards, with the growth rings running horizontally, are more affordable and still carry wood's antibacterial properties, just with knife marks showing up sooner.

Maple

Maple is the closest thing to an industry standard, and for good reason. With a Janka rating around 1,350 to 1,450, it sits firmly in the ideal range, tight closed grain, solid antibacterial properties, and dense enough to stay put on a counter without sliding. It's also widely available and reasonably priced relative to other hardwoods. The tradeoff is mostly aesthetic. Maple is light colored and fairly plain compared to darker woods, and it shows flour, juice, and general staining more visibly than a darker board would.

Walnut

Walnut sits a notch softer at around 1,010 Janka, which puts it in a pleasant middle ground, hard enough to hold up to daily use, soft enough to be especially gentle on knife edges. Its dark color hides stains and wear far better than maple, and it has a reputation as one of the more attractive woods for a board that also functions as a serving piece. The cost is usually higher than maple, and it benefits from slightly more frequent oiling to keep the color rich and prevent drying.

Cherry

Cherry is the softest of the commonly recommended hardwoods, around 950 to 995 Janka. That softness makes it the gentlest option on knife edges of the group, and it develops a deepening reddish patina with age that a lot of people find appealing. The downside is durability. Cherry shows cut marks faster than maple or walnut and needs more frequent conditioning to stay in good shape. It's a better fit for lighter prep work and presentation than for someone breaking down a chicken every night.

Teak

Teak brings a different tradeoff entirely. Its Janka rating, around 1,000 to 1,070, looks moderate on paper, but teak contains natural silica that makes it noticeably harder on knife edges than its hardness number alone would suggest. What it offers in return is exceptional water resistance from its natural oil content, which makes it low maintenance and well suited to a humid kitchen or heavy water exposure. It's also one of the pricier options in this list.

Acacia

Acacia has become popular quickly, and it earns the popularity on durability. At around 1,700 to 1,750 Janka, it's harder than maple, walnut, or cherry, with natural oils that give it solid water and bacterial resistance similar to teak. It holds up extremely well to heavy daily use and tends to be more affordable than walnut or teak, with striking natural grain patterns. The hardness cuts both ways though. Acacia is noticeably tougher on knife edges than the softer hardwoods, and because most acacia boards are made by gluing together smaller strips, they're slightly more prone to splitting at the seams if not kept properly oiled.

Mixed (Multiple Wood Types)

Mixed wood boards, often combining a darker hardwood like walnut with a lighter one like maple or cherry, are common in end grain construction and mostly come down to aesthetics rather than function. There's no meaningful performance downside to mixing species in a single board as long as each wood used is food-safe and within the right hardness range. The only practical note is that softer woods in the mix may show wear slightly faster than the harder species sitting next to them, which can eventually create a subtly uneven surface over years of heavy use.

Oak

The one wood worth actively avoiding is anything open-grain, oak being the most common example. Its larger pores trap moisture and food particles in a way that closed-grain hardwoods don't, making it a worse fit for food safety despite being a fine choice for furniture.

Bamboo: not technically wood, but functions like it

Bamboo is botanically a grass, but it behaves like a hardwood in a kitchen and doesn't shed microplastics. Its Janka rating, often cited around 1,380, makes it harder than maple or walnut, which translates to strong durability but a bit more wear on knife edges than the softer hardwoods.

It's also the most affordable non-plastic option on this list, and one of the more sustainable, given how quickly bamboo grows compared to a hardwood tree. The tradeoffs are real, though. Because bamboo boards are made by gluing together strips, the seams can be a weak point prone to splitting or cracking if the board dries out, and it requires the same regular oiling routine as wood to stay in good condition.

Glass, marble, and stone

These materials are non-porous, easy to wipe down, and don't shed microplastics or harbor bacteria in surface grooves the way scored plastic does.

The tradeoff is significant for anyone who cares about their knives. Glass and stone are considerably harder than any wood or bamboo option, and repeated contact with that kind of surface dulls a blade noticeably faster. They're also loud under a knife and can chip a blade edge under enough force. These tend to work better as a serving surface, a pastry slab, or an occasional-use board than as a primary daily prep surface for anyone doing real cooking volume.

Composite and silicone

Composite boards made from compressed paper and resin, often branded as Richlite, offer a dishwasher-safe, non-plastic option that doesn't shed microplastics. The resin binding the fibers together is worth knowing about if you're trying to minimize synthetic additives entirely, but for most people it's a reasonable middle ground between plastic and wood.

Silicone boards and mats are a newer category that resist the kind of knife scoring plastic develops, since the material tends to seal back together slightly after a cut. Food-grade, platinum-cured silicone is considered chemically more inert than standard plastics, with a lower assumed health risk, though the research base here is smaller than what exists for wood or plastic given how new the category is.

Our recommendation

For an everyday board that balances knife care, durability, and food safety, walnut or maple end grain hardwood is the strongest overall choice. Both sit in the ideal hardness range, carry wood's documented antibacterial properties, don't shed microplastics, and hold up to years of regular use with basic oiling.

Between the two, walnut edges ahead for anyone who wants the gentlest treatment of their knives and doesn't mind paying slightly more. Maple is the better pick for sheer durability and value if a lighter wood tone doesn't bother you.

For a budget pick, bamboo is the clear winner. It avoids the microplastic problem entirely, holds up well to daily use, and typically costs considerably less than a quality hardwood board, making it the most practical entry point into the non-plastic category.

The one thing worth retiring regardless of budget is a plastic board that already shows visible knife scoring. At that point it's actively shedding more with every cut, and the case for switching it out is straightforward.
