Growing Sprouts and Microgreens at Home Is Easy and Nutritionally Excellent
Some of the most nutrient-dense foods you can eat require almost no space, minimal equipment, and less than a week to produce. Here's what the research says about sprouts and microgreens and how to actually grow them.

Growing your own food might sound like a chore until you realize some of the most nutritionally concentrated foods available can be grown on a kitchen counter in a mason jar with a mesh lid and about five minutes of effort spread across a week. Sprouts and micro-greens sit in a category of their own in terms of nutrient density relative to the effort required to produce them, and the research behind some specific varieties is compelling enough to start growing them at home rather than relying on the grocery store.
What sprouts and microgreens actually are
Sprouts are seeds germinated in water and harvested within three to five days of sprouting, before they've developed any significant root or leaf structure. The entire plant, seed, root, and emerging shoot, is edible. The sprouting process activates enzymes and dramatically increases the bioavailability of nutrients that are present in the seed in a less accessible form.
Microgreens are the next developmental stage. They're grown in a growing medium, harvested after the first true leaves appear at seven to fourteen days, and contain a more developed root and shoot structure than sprouts. Only the above-ground portion is typically eaten.
Both are harvested at early growth stages where the plant has mobilized the nutritional resources stored in the seed to fuel rapid initial development. That concentration of energy and nutrients in a small volume of plant material is what makes them nutritionally interesting relative to their fully grown counterparts.
The nutritional case
A frequently cited USDA-funded study published in the Journal of Agricultural and Food Chemistry found that micro-greens contain four to forty times the nutrients of the mature plant versions of the same vegetables. The range is wide because it varies significantly by variety, but the general principle that young seedlings concentrate nutrients in ways that mature plants don't has been replicated across multiple research groups.
The mechanism is logical. The seed contains everything the plant needs to fuel the energy-intensive process of initial germination and early growth. That stored nutritional energy is most concentrated and most bioavailable in the early growth stages, before the plant has had time to distribute those resources across a larger biomass.
Broccoli sprouts
Broccoli sprouts are the most researched variety and the one with the strongest specific evidence base behind them.
The key compound is sulforaphane, a sulfur-containing phytochemical that is produced when the enzyme myrosinase, present in raw cruciferous vegetables, interacts with glucoraphanin, the precursor compound. Broccoli sprouts contain between 10 and 100 times more glucoraphanin than mature broccoli, which makes them the most concentrated food source of sulforaphane available.
The research on sulforaphane is extensive. It activates Nrf2, a transcription factor that upregulates the body's antioxidant and detoxification pathways. Studies have found associations with reduced inflammation, potential cancer-preventive effects particularly for certain hormone-sensitive cancers, improved blood sugar regulation, and neuroprotective effects that have made it a subject of active research in Alzheimer's and Parkinson's disease.
Broccoli sprouts are one of the more straightforward nutritional interventions with a legitimate research base behind specific mechanisms. Growing them at home in a jar with a sprouting kit costs a fraction of what packaged broccoli sprouts cost at a grocery store and takes three to five days from seed to harvest.
Radish sprouts
Radish sprouts have a sharp, peppery flavor that makes them a natural addition to salads, sandwiches, and bowls. They contain significant amounts of vitamin C, folate, and various antioxidant compounds, and like broccoli sprouts they belong to the cruciferous family, giving them a similar glucosinolate profile, though with different specific compounds than broccoli.
They grow quickly and reliably in a jar sprouting setup, typically ready in three to five days, and add both nutritional value and sharp flavor to whatever they're added to.
Sunflower microgreens
Sunflower microgreens are one of the more popular varieties for home growing because they're fast, reliable, and produce a substantial yield relative to the seed cost. They have a mild, slightly nutty flavor and a satisfying texture that holds up well in salads and as a topping.
Nutritionally they're a solid source of protein relative to other microgreen varieties, along with vitamin E, B vitamins, and zinc. The fat profile from sunflower seeds carries through into the microgreen stage, making them one of the more calorically substantial microgreens and one that adds more to a meal than a garnish.
Pea shoots
Pea shoots are the young tendrils and leaves of pea plants harvested in the first week to ten days of growth. They're one of the sweetest and most palatable microgreens, with a fresh flavor that's recognizably pea-like without the starchiness of the mature vegetable.
They're a good source of vitamins A, C, and folate, and contain a good amount of protein and fiber relative to their size. Pea shoots are among the easier microgreens to grow and one of the more universally enjoyed in terms of flavor, which makes them a good starting point for anyone new to home growing.
How to actually grow them at home
Sprouts are the most accessible starting point because they require no growing medium, no special lighting, and almost no space.
The setup is minimal. A wide-mouth mason jar, a mesh sprouting lid or a piece of cheesecloth secured with a rubber band, and sprouting seeds, which are seeds specifically intended for sprouting that haven't been treated with any coatings or fungicides. The process is straightforward. Soak the seeds in water overnight, drain, and rinse twice daily, morning and evening, turning the jar upside down at an angle to allow drainage and airflow. Within three to five days depending on the variety, the jar will be full of fresh sprouts ready to eat.
Microgreens require a shallow tray, a growing medium, and a light source. A south-facing windowsill works for most varieties if you don't have a grow light. Seeds are spread densely across the surface of damp growing medium, covered for the first few days to encourage germination, then uncovered and moved to light until the first leaves develop fully and the microgreens are ready to harvest at seven to fourteen days.
Both processes become routine quickly. The daily rinse for sprouts takes thirty seconds. The attention required for microgreens beyond initial setup is minimal. The yield relative to the effort and cost is one of the better returns available from any home food production activity.
The practical case
Fresh sprouts and micro-greens from a grocery store are expensive relative to their volume, often $4 to $7 for a small package with a short shelf life. Growing them at home produces a continuous supply at a fraction of the cost, with better freshness since they're harvested immediately before eating rather than days after packaging.
For anyone interested in adding nutrient-dense food to their diet without significantly changing what they eat, sprouts and microgreens integrate easily. They add to salads, bowls, eggs, sandwiches, and smoothies without requiring any preparation beyond a rinse and a handful added on top.
